ALOO TIKKI BURGER

I’m very excited to share the recipe of Indian style aloo tikki burger , concept derived from the famous McAloo of McDonald’s. Aloo tikki burger is a combination of Indian potato patty and soft bun.The patty is made with boiled and mashed potatoes , green peas and Indian masalas. The spread for this burger is made using ketchup and mayonnaise.


 
SERVES : 4
PREP TIME :30 MIN
COOK TIME : 20 MIN
 
 
INGREDIENTS 
  • Burger bun - 4 
  • Butter - 2 Teaspoon
  • Boiled potatoes - 4 (small size)
  • Green peas - 1/4 cup
  • Turmeric powder - 1/2 Teaspoon
  • Red chilly powder - 1 Teaspoon
  • Coriander powder - 1 Teaspoon
  • Garam masala powder- 1/2 Teaspoon 
  • Maida - 1 cup 
  • Bread crumbs - 1/2 cup
  • Salt - To taste
  • Oil - 4 Tablespoon
  • Beaten rice - 1/4 cup
  • Water - 1/4 cup
 
 
METHOD
 
ALOO TIKKI PREPARATION
 
Boil potatoes in pressure cooker. Allow it to cool and peel them.
 
Soak beaten rice/poha in warm water.
 
Heat a pan , add 2 tablespoon of oil .
 
Add fresh green peas / frozen peas and saute till peas cooks.


 
Lower the heat and add the spice powders - chilly powder , coriander powder, turmeric powder , garam masala powder.Saute for few minutes.


 
Grate the boiled potatoes , add the requied salt and mix and combine well.

 
Switch of the flame and allow the mixture to cool.
 
Spread a cling film and add the cooled potato mixture on it.


 Roll into a cylinder . Shape the patty in such a way that the patty is smaller than the diameter of the burger. Keep it in refrigerator for 30 to 40 minutes. Keeping in refrigerator helps tikki to hold shape while cutting them and frying.
 

Slice them into 1 centimetre thick discs.


 
Take a portion of  refined flour in a plate , other portion in a bowl . Add required water to the bowl of refined flour snd make it to a semi thick slurry. Take bread crumbs in a small plate . Add salt to them and mix well.


 
Take each tikki and coat it in refined flour , remove the excess flour. Dip it into the slurry and then coat it with the bread crumbs.Coat all the tikkkis in similar way .


 
Heat butter in a frying pan . Shallow fry all the tikkis on both the sides until golden and crisp.
 


TANGY MAYO SAUCE
 
Mix 2 tablespoon each of tomato ketchup and mayonnaise. Combine theem well.



 
ASSEMBLY OF THE BURGER
 
Cut open the burger bun into half. Toast the burger bun lightly on a frying pan using butter.


 
Place onion and tomato slices , add the aloo tikki , tangy mayo sauce and cheese slice and close the bun. Aloo tikki burger is ready.  Serve it with french fries.

Green pepper fish fry

 Green pepper fish fry is a very tasty fried fish recipe using Green pepper corns. This can be best enjoyed with boiled rice as a side dish.Any fish of your choice can be used, I'm using mackerel. 

 

 

 

INGREDIENTS  

  • Mackerel- 4
  • Green pepper corns  - 200 grams
  • Shallots  - 10 
  • Salt - to taste 
  • Turmeric powder - 1 teaspoon 
  • Ginger - small piece
  • Garlic - 10 cloves 
  • Lemon juice - juice of half a lemon
  • Water 
  • Curry leaves - few
  • Coconut oil  - for frying 

 

 

 

 

METHOD

Clean the fish and score the fishes.

 

 

Separate all the pepper corns from its stem.

Add pepper corns , salt , turmeric powder ,ginger , garlic , shallots  into a mixer jar . 

 

 

 

Make a coarse paste using little water.

 

 

Add juice of half a lemon and mix well.

 

 

Apply this paste into the cleaned fish. Massage into the score and cavity of the fish.

 

 

Marinate for 30 minutes in the refrigerator. 

Heat Coconut oil in a frying pan. Add few curry leaves  , place the fish and shallow fry on both sides until fish is cooked. 

 

 

Serve hot with boiled rice and curry.
