 UNNIYAPPAM / GULIYAPPA

Unniyappam is a small round snacks made from rice, jaggery , banana, roasted coconut pieces, roasted sesame seeds, ghee  and  cardamom powder fried in coconut oil. In Malayalam ‘unni’ means small and ‘appam’ means rice cake. It is made using a special pan call Appachatti.









INGREDIENTS

  • RAW RICE – 2 CUPS
  • JAGGARY – 1 CUP
  • SMALL RIPE BANANAS – 2 NO'S
  • BLACK SESAMA SEEDS – 2 TABLESPOON
  • COCONUT PIECES – 4 TABLESPOON
  • CARDOMOM POWDER – 1 TEASPOON
  • SALT – TO TASTE
  • COCONUT OIL –FOR FRYING
  • WATER -1/4 CUP




HOW TO MAKE UNNIYAPPAM



1. Rinse 2 cups of raw rice thoroughly. Soak the rice in enough water for at least 3 to 4 hours, or preferablely overnight. Always use short grain rice for best result .














2. Prepare jaggery syrup – Add jaggary into a sauce pan along with ¼ th cup of water. Boil to make a syrup. Adjust the quantity of jaggary based on your sugar palate.











3. Transfer the soaked rice into a mixer jar, drain all the water before transferring. Add the jaggary syrup and grind into a coarse paste, like texture of idly rava.











4. Grind 2 ripe banana in a blender and make a smooth paste , add it to the batter and mix well. Add a pinch of salt to the batter.













5. In a separate pan, heat ghee , add chopped coconut pieces and roast till it turns golden. Add black sesame seeds and roast for 2 minutes. Switch off the flame and cool it completely.












6. Add the cooled roasted coconut and sesame mixture into the batter and combine well.













7. Cover the batter and keep in warm place for 3-4 hours.


8. Heat appachatti on medium flame. Add coconut oil, once the oil is hot pour the batter into each mould. Fill only ¾ th of each mould using a laddle or a spoon.










9. Once the appams are cooked on one side , they detach from the pan and will start to rotate in oil. Turn them around and cook on both the sides.









10.Remove and transfer into kitchen towels. Store in airtight containers.














NOTES

* It is better to use raw rice for soft unniyappams. It can be prepared using rice flour too , but the texture will be denser . There is a noticeable difference in texture as well as taste while using raw rice.

*If the batter is too thick then add enough water as required. 

*To avoid batter sticking to the pan allow the oil to heat properly. 

*Keep heat uniform throughout the process on medium heat .. If you increase the heat, appams may not cook through properly. 

*If you prefer fluffier appam add baking soda.

PRAWN GHEE ROAST

 PRAWN GHEE ROAST is a popular Mangalore recipe , originating from s small town near Mangalore called Kundapur.This flavourful recipe is made using prawns marinated in few spices and ghee .













INGREDIENTS

  • Prawns -500 Grams
  • Coriander seeds-1Tablespoon
  • Fenugreekseeds1/2 Teaspoon
  • Cumin seeds -1 Teaspoon
  • Poppy seeds - 1Teaspoon
  • Mustard seeds - ½ Teaspoon
  • Byadgi Red Chilly - 10-15 nos
  • Cashew nuts - 4 nos
  • Black peppercorn-1 Teaspoon
  • Jaggery – 1 Tablespoon
  • Tamarind pulp – 2 Tablespoon
  • Salt - to taste
  • Ghee -3 Tablespoon
  • Lemon juice – 1 Tablespoon
  • Curry leaves – few










PREP TIME        :24 -30 MINUTES
Cooking Time : 30-35 minutes
Serves                  :3-4 People


PREPARATION

To make the prawns ghee roast , clean and de-vein the prawns and wash them thoroughly .

MARINATION
Add the cleaned prawns to a bowl, add salt , lemon juice and turmeric powder mix well and keep them aside for at least 30 minutes.









MASALA PREPARATION

 Soak byadgi red chilies with few cashew nuts in hot water for few minutes , keep the aside.











 Heat a pan on medium flame, add fenugreek seeds, cumin seeds, black pepper corn, mustard seeds, poppy seeds and coriander seeds. Dry roast them till they turns aromatic.










 Transfer the into a mixer jar, add the soaked dry chilly and cashew nuts. Add little water and grind them into a smooth paste.










METHOD

 Heat a pan on medium heat, add 1 tablespoon  ghee and shallow fry the marinated prawns till they are perfectly cooked. Remove it from the pan and keep them aside.








 To the same pan, add the remaining ghee, curry leaves and the ground masala paste and saute till the water is completely dried and the masala turns into dark color.









 Add jaggery and tarmarind pulp cook for few minutes, the ghee in masala start to separate, at this point add the cooked prawns and combine well. Serve hot with boiled rice or neer dosa.

Tangdi/Tangri Kabab | Without Tandoor oven

Tangdi kabab are a popular restaurant style appetizer made with the chicken drumsticks, curd , cream and spices.
Tangdi literally translates to leg and kebab is a piece of grilled food. Tangdi/ Tangri kabab are grilled either oven , charcoal fire , tandoor oven or regular grill pan.
There are many varieties of recipes which vary from restaurant to restaurant. The common thing would be that they are mildly spiced , So they would look anywhere from pale white to light brown.







INGREDIENTS 

Chicken drumsticks - 500 grams

First marinade
  • Ginger garlic paste - 1 Tablespoon 
  • Salt - To taste 
  • Lemon juice -  Juice of half a lemon


Second Marinade
  • Yogurt - 1/2 Cup
  • Cream - 1/4 Cup
  • Corn flour - 1 Tablespoon
  • Green chilli chopped - 2 Tablespoon
  • Cheese - 1 cube (small)
  • Egg - 1 No 
  • Salt - to taste
  • Black pepper powder - 1 Tablespoon
  • Coriander leaves (chopped) - ½ Cup

FOR FRYING

  • cooking oil - 1 Tablespoon
  • Butter - 1 Tablespoon for basting

HOW TO MAKE TANGDI KABAB ON PAN

PREPARATION : FIRST MARINADE
Add ginger garlic paste , salt and lemon juice to a bowl and mix them .
Make deep incisions on the chicken drumsticks.
Add them into the marinade and rub it on the chicken drumsticks, keep it aside for 30 minutes

 Marination is the key to make succulent kababs .Chicken absorbs flavours and tenderises , which helps it to cook soft and succulent 













SECOND MARINADE
To another bowl, add yogurt , fresh cream , corn flour , chopped green chillies, egg , salt, black pepper powder , fresh coriander leaves chopped and grated cheese.
Mix them all together 
Add the marinade chicken pieces and combine everything well .

 Add hung curd for better texture of the kababs .













GRILLING/FRYING
Heat a grill pan on medium heat , add cooking oil , place the marinated 
drumsticks. Grill the chicken on both sides. 









Baste the chicken drumsticks with butter at regular intervals.












Serve the kababs with mint chutney, onions and fresh coriander and mint leaves.

 Strawberry and oatmeal smoothie is a perfect breakfast on the go for healthy start of the day. The combination of berries and oats make it rich and delicious.

INGREDIENTS

  1. Strawberry - 4
  2. Oatmeal -  1/4 cup
  3. Chia seeds - 1/4 cup

  4. Honey - 2 teaspoon
  5. Water - as required 



HOW TO MAKE STRAWBERRY OATMEAL SMOOTHIE


1. To make the smoothie , add all the ingredients to a blender and make a smooth puree with little water.

2. Adjust the consistency of the smoothie by adding water .

3. You can add milk or curd to the smoothie based on your choice.

 Spaghetti aglio e olio pronounced as ah-li-oh eh oh-li-oh translate to "garlic and olive oil".
Aglio e olio is a traditional Italian dish basically prepared using spaghetti , garlic and olive oil. The original recipe doesn't include cheese , adding some cheese enhances the flavour and texture , parsley adds pop of colour. The secret to a creamy pasta dish is using extra virgin olive oil and the pasta water. The key is slowly toasting the garlic slices to a perfect golden brown in the olive oil.

Prep time : 10 minutes
Cook         : 22 minutes
serves      : 4 


INGREDIENTS


1. SPAGHETTI - 200 grams , thin noodles are the best for this recipe , they absorb sauce well and are easy to work with.

2.EXTRA VIRGIN OLIVE OIL - 3 Tablespoon, use the best quality olive oil as this is the key ingredient.

3. GARLIC - 4 to 5 cloves , add finely sliced garlic , you can increase or decrease the quantity.

4.RED CHILLY FLAKES - 1 Teaspoon , adds a little heat and colour to the dish.

5.GRATED PARMESAN - optional , adds great taste and creaminess to the dish.

6.SALT - to taste 

7. WATER - to boil the spaghetti.

8. PARSLEY - for garnish.


HOW TO MAKE SPAGHETTI AGLIO E OLIO

Prepare the pasta : Boil water in a large pot . Add enough salt. Cook the pasta according to the package instructions. Cook till al Dante . Reserve a cup of pasta cooked water .Strain the pasta and kept aside.

Prepare the sauce : In a saucepan , add extra virgin olive oil .Warm the oil in low heat , add the chopped garlic . Cook until the edges of the  garlic is golden brown. Do not brown the garlic. Stir regularly to prevent it from burning. Add red pepper flakes and saute for 30 seconds.

Add pasta to aglio e olio sauce : Add the cooked pasta to the sauce , add the reserved pasta water and toss to combine . Cook till the water is reduced. Add the chopped parsley and cook for 2 minutes.Turn of the heat and add grated parmesan and parsley to garnish.
